Thesis Title

Social, Behavioural and Environmental Factors Influencing Foodborne Illness Among Saudi Arabian Students During the Covid-19 Pandemic

Supervisors

  • Professor Melissa Ruth Haswell  (Principal Supervisor)
  • Associate Professor Leisa-Maree Leontjew Toms  (Associate Supervisor)

Citation

This body of research sought to identify often overlooked social, cultural and behavioural contributions to the measured frequency of foodborne illness among university students studying Public health in Makkah City, Saudi Arabia. Data was collected from 215 students through two surveys and monthly reporting of foodborne episodes over one year. A higher frequency of reported episodes was associated with some socially and culturally -influenced food access, preparation, storage and preferences in exploratory regression models. The methods and findings of this research can assist future studies to guide health promotion practices aiming to reduce foodborne illness.

Thesis Title

Young People and Their Parents' Perceptions About Healthy Eating and Physical Activity in Selected Schools in Sri Lanka: The Influence of Digital Storytelling

Supervisors

  • Professor Neil Anthony King  (Associate Supervisor)
  • Dr Kelli Anne-Maree McGraw  (Associate Supervisor)
  • Dr Marguerite Claire Sendall  (Principal Supervisor)

Citation

This novel research assessed the impact of a digital story on healthy eating and physical activity knowledge, attitudes, beliefs, and behaviours among school attending young people and their parents. Three studies, guided by the Theory of Planned Behaviour were conducted: digital story development; questionnaire validation and pre- and post-intervention questionnaires with students; and post-intervention interviews with parents in Colombo, Sri Lanka. The digital story was effective in enhancing healthy eating and physical activity among young people. Parents considered the digital story contextually relevant and culturally acceptable. Integrating the digital story into school curricula and health promotion programs is recommended.

Thesis Title

Determinants and Distribution of Coexisting Forms of Malnutrition Among Neonates, Infants and Children of Pakistan

Supervisors

  • Yvette Miller  (Associate Supervisor)
  • Dr Smita Nambiar-Mann  (Associate Supervisor)
  • Associate Professor Darren Eastwood Wraith  (Principal Supervisor)

Citation

This thesis addressed the knowledge gap surrounding coexisting forms of malnutrition (CFM) among Pakistani children aged below five years old. Secondary data analyses of 10 different national and regional surveys of Pakistan conducted from 2010 to 2019 was used to assess the prevalence, trends, and determinants of paediatric CFM. Poverty, poor maternal health, and inadequate feeding practices were identified as contributing factors to CFM. The insights provided by this thesis emphasized the importance of incorporating CFM into the national and regional surveys and suggested various nutrition specific interventions for managing and preventing paediatric CFM.
