Rationale

Practice in the area of foodservice management is vital to integrate theory with practice. Dietetic professionals manage foodservices or components of foodservices to provide safe and nutritious foods for groups, and this unit provides you opportunities to work on specific issues in real-life food and nutrition service settings to develop effective skills and competence in this area. The Dietitians Association of Australia has minimum practice requirements, which is provided by this unit.

Aims

The aim of this unit is to provide you with real problems in foodservice settings, in order to demonstrate competence in this field.

Objectives

On completion of this unit, you should be able to demonstrate entry level competency in the area of foodservice management to demonstrate safe practice. This will involve being able to:

  1. demonstrate knowledge sufficient to ensure safe dietetic practice in foodservice management
  2. demonstrate skills and competence in the assessment of opportunities to improve food and nutrition in an institution
  3. demonstrate skills and competence in the planning and organising of foodservices
  4. implement activities to support the delivery of quality nutrition and food standards within a foodservice and evaluate and disseminate these results
  5. demonstrate basic skills in research and evaluation
  6. demonstrate an organised, professional and ethical approach to work including sensitivity to cultural and gender-related issues

Content

You will be assigned to one placement, totalling 5 weeks within a congregate foodservice setting. Supervisors select projects from either a suite offered for consideration by QUT or locally devised. You are then responsible for carrying out the project in a suitable manner and submitting a completed report to the QUT supervisor for marking and one to the supervisor for their attention.

Approaches to Teaching and Learning

This unit will be available in internal mode. You will be placed with supervisors, either individually or in pairs. You receive help from these supervisors as well as QUT staff. You are expected to demonstrate initiative and problem solving skills. Tutorial assistance is provided by QUT. You may be required to attend placement out of the Brisbane metropolitan area.

Assessment

There are two assessments to be completed throughout the semester.

Designated unit
This is a designated unit. Designated units include professional experience units, units requiring the development of particular skills, and units requiring the demonstration of certain personal qualities, and are deemed to be critical to progress in your course. If you fail to achieve a passing grade in this unit on two occasions you will be issued with an unsatisfactory academic performance notice and could be excluded from the course. Supplementary Assessment will NOT be granted to students enrolled in designated units.Assessment will be spaced throughout the semester to provide the opportunity for feedback on your learning at key points. You will be provided with feedback on each assessment item as you progress through the unit.

You will be provided feedback on your performance as you progress through placement by your placement supervisor. You should complete the placement competency forms throughout your placement and discuss these and seek feedback with your supervisor and tutor on a weekly basis. A draft of your written report should be provided to your supervisor before completion of the placement for feedback before final submission.

Assessment name: Demonstration
Description: You must complete the required time of the placement (25 days) and achieve satisfactory competence to meet the Dietitians Association of Australia accreditation requirements, including demonstrating appropriate professional conduct, as described in the DAA Code of Professional Conduct guidelines. Competency statements must be completed by you and confirmed by your supervisor. Placement performance will also be assessed by supervisor and tutor feedback. This is a non-graded unit. You will recieve satisfactory or unsatisfactory for this unit. You will need to complete all components of this unit to a satisfactory level.

Assessment name: Report
Description: You will be required to provide a final report on the project you undertook as part of your placement and to undertake a debrief presentation relating to the placement project. Reports will be assessed by the QUT unit coordinator.

Blue card
The Commission for Children and Young People and Child Guardian Act (2000) requires that students undergo a criminal history check and be issued with a blue card by the Commission prior to undertaking field experience in a school or centre, or undertaking activities in any unit which may involve contact with children. You will require a blue card for clinical placement/practicum in this unit. You should apply for a blue card at least 12 weeks before any clinical placement/practicum. Assessment for this unit will involve a workplace-based assignment. You should be aware of, and abide by, the health and safety requirements of the workplace and you are expected to undergo any induction or other training provided in the workplace for employees or visitors to the workplace as appropriate. See the Nutrition Workplace Integrated Learning website for further details including vaccination and working with children requirements. Refer to QUT's Faculty of Health Student Immunisation Policy for recommendations and student requirements regarding vaccine preventable diseases. When completing education sessions, QUT health and safety and ethics forms must also be completed.
